Contamination cannot be judged by appearance, and according to USDA estimates, approximately one in every 20,000 eggs may be contaminated with Salmonella. In the U.S., where 67 billion eggs are produced annually, this means up to 3 million eggs could harbor the dangerous bacteria.

Technical Background of Pasteurization

Generally, cooking an egg thoroughly until the yolk and white are set will kill Salmonella bacteria. However, risk remains for recipes that use eggs in a near-raw state, such as omelets or carbonara pasta. Sous vide is a cooking method where food is vacuum-sealed and heated for a long period in water maintained at a precise, constant temperature. This technique allows for exact control of the food’s core temperature, is effective for preserving nutrients and enhancing texture, and, from a food safety perspective, can achieve pasteurization by maintaining the temperature and time necessary to kill Salmonella.

Following advice from an infection specialist, the author conducted an experiment on pasteurizing eggs using a sous vide device. The experiment utilized an immersion circulator like the Anova Sous Vide Precision Cooker 3.0. This device can maintain water temperature within ±0.1°C accuracy. The process required the sous vide machine for temperature control, a thermometer, and approximately an hour and a half of time.

Experiment Process and Results

The experiment considered a method of breaking the eggs before submersion, rather than placing whole eggs with shells into the water. However, from a food safety standpoint, the risk of contamination from the shell’s condition or processing must also be considered. Experts explain that specific temperature ranges and holding times are critical for egg pasteurization. To kill Salmonella, the egg must be heated at a certain temperature for a sufficient duration, but temperature management is required to avoid over-solidifying the egg proteins.

The sous vide device used in this experiment maintained a constant temperature while heating for approximately 90 minutes. As a result, the texture of the egg yolk and white remained unchanged, preserving a near-raw state. According to the infectious disease specialist, this method has the potential to pasteurize eggs. However, the experiment was small-scale, and further verification is needed for practical home application.

Practicality and Limitations for Home Use

Sous vide machines are becoming increasingly accessible to consumers, and prices are becoming more affordable. However, performing pasteurization at home presents challenges in terms of precise temperature management and time assurance. Individual egg differences and freshness may also have an impact. Food safety experts warn that home pasteurization does not offer a complete guarantee. If heating is insufficient, there is a risk of Salmonella survival, so caution is advised when serving to high-risk groups (young children, the elderly, immunocompromised individuals).

As general countermeasures, it is recommended to refrigerate eggs below 42°F (approximately 5.5°C) and to wash hands thoroughly before and after handling. Additionally, cooking dishes containing eggs until they reach a safe core temperature is a sure method.

In the short term, this recall and the experiment report are likely to raise awareness about handling eggs at home. This could also lead to increased sales of sous vide machines, which may present a good opportunity for home appliance manufacturers promoting food safety.
